This Philly Cheese Meatloaf recipe combines the classic flavors of meatloaf with the melty goodness of provolone cheese. The addition of sautéed vegetables adds a burst of flavor and texture.

 

Ingredients:
For the Meatloaf:

Ground beef (80/20) 2 lbs
Onion, finely chopped 1 small
Green bell pepper, finely chopped 1
Mushrooms, chopped (optional) 1 cup
Garlic, minced 2 cloves
Eggs 2
Breadcrumbs (or crushed Ritz crackers) 1 cup
Worcestershire sauce 1 tablespoon
Ketchup 1 tablespoon
Garlic powder 1 teaspoon
Onion powder 1 teaspoon
Dried oregano 1 teaspoon
Salt 1 teaspoon
Black pepper 1/2 teaspoon
Shredded provolone cheese 1 cup
Olive oil 2 tablespoons
For Topping:

Provolone cheese 4-5 slices
Fresh parsley (optional) For garnish
Instructions:
Preheat oven: Preheat your oven to 375°F (190°C). Lightly grease a 9×5-inch loaf pan.
Sauté vegetables: In a large skillet, heat olive oil over medium heat. Add chopped onion, green bell pepper, mushrooms (if using), and garlic. Sauté until soft and fragrant. Remove from heat and let cool slightly.

Prepare meatloaf mixture: In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, ketchup, garlic powder, onion powder, oregano, salt, and pepper. Add sautéed vegetables and mix until combined.
Assemble meatloaf: Press half of the meatloaf mixture into the prepared loaf pan. Sprinkle with shredded provolone cheese, then top with remaining meat mixture. Press down firmly.
Bake meatloaf: Place meatloaf in the preheated oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C).
Add cheese topping: Once meatloaf is fully cooked, remove from the oven and place slices of provolone cheese on top. Return to the oven and bake for 5-7 minutes until cheese is melted and bubbly.
Serve: Allow meatloaf to rest for 5-10 minutes before slicing. Garnish with fresh parsley if desired and serve hot. Enjoy with a side of mashed potatoes or a simple green salad.
