Butternut Cookies!!!

Butternut Cookies are a sweet cookies that if they were to have taste, it would be that of delightful homemade baked cookies. This cookie has a very light and airy feel to them, almost weightless, which stirs the desire for more. It has just the right amount of nuts and sweetness that hits the spot whenever someone is looking for something sugary. Each and every bite of these butternut cookies is siren of warmth and comfort because of their uncomplicated yet delicious flavor.

 

INGREDIENTS
One cup, which is 200 grams, of well-mashed butternut squash that has been cooked and cooled.

1/2 cup (115g) unsalted butter, softened

1/2 cup packed (110 grams) brown sugar

1 teaspoon of vanilla extract

1/2 teaspoon baking powder

1 large egg

1/2 teaspoon of baking soda

1/2 cup (100g) granulated sugar

2 cups (240g) of all-purpose flour

1/2 teaspoon of salt

1/2 cup (60g) chopped nuts (optional)

 

INSTRUCTIONS
The first step is to preheat the oven to 350 degrees Fahrenheit which is equivalent to 175 degrees Celsius. Place parchment paper over the baking sheet and keep it aside.

Using a hand mixer, combine together the warm butter, granulated sugar and brown sugar in a mixing bowl. Cream together the ingredients until the mixture becomes light and fluffy.

Stir in the mashed butternut squash, add the egg and add the vanilla extract to the butter-sugar mixture. Stir the contents until they combine together.

In a separate bowl, mix the flour, baking powder, baking soda and salt and whisk them evenly until they are well mixed.

The next step is to combine the dry and wet ingredients but this time try and not over mix until a cookie dough is formed.

If you like, add the nuts and mix them with the batter.

Using a cookie batter, make a rough circle shape. Squeeze it out onto the parchment paper where each circle is separated by a distance of at least a cookie’s length.

Place in the preheated oven and set the timer for 12 to 15 minutes. Or make a guess that the time will take for the edges to become golden brown, which means the cookies have been properly cooked.

Take out the Butternut Cookies from the oven and allow them to cool for a minute or two on the baking sheet and a few more minutes after transfering them to a wire rack.
