Ingredients:

 

8 ounces macaroni, cooked and drained

6 strips bacon, cooked and crumbled

¼ cup salted butter, divided

1 onion, quartered and thinly sliced

7 ounces shredded Gruyere cheese

2 cloves garlic, minced

2 tablespoons all-purpose flour

½ cup heavy cream

1 ½ cups whole milk

Salt and pepper to taste

Instructions:

 

Caramelize the onions and garlic in half the butter over medium heat for 15-20 minutes. Set aside.

In the same skillet, melt the remaining butter. Add flour and whisk for 1-2 minutes to form a roux.

Gradually whisk in the milk and cook until thickened, about 3-4 minutes.

Stir in the Gruyere cheese until the sauce is smooth. Add the cream, salt, and pepper, stirring well.

Mix the cooked macaroni, caramelized onions, and cheese sauce in the skillet. Add most of the bacon, reserving some for topping.

Spread evenly and top with the remaining bacon.

Optional: Broil in the oven for a few minutes until golden and bubbly. Cool briefly before serving.
