Ingredients:
1 lb boneless, skinless chicken breasts
1 chopped onion
1 stick butter
1 can Rotel tomatoes (10 oz, regular or hot)
1 lb Velveeta cheese (regular or Mexican)
1 lb spaghetti pasta
1 can cream of chicken soup (10.5 ounces)
1 can cream of mushroom soup (10.5 ounces)
1 chopped bell pepper (red or green)
Salt and pepper to taste
Instructions:
1. Boil chicken breasts in seasoned water until fully cooked (10-12 minutes). Remove and set aside. Cut into pieces.
2. Boil spaghetti in the remaining broth as per package instructions.
3. Drain pasta; do not rinse.
4. In the same pot, sauté onion and bell pepper in melted butter until soft.
5. Add tomatoes, soup, and cooked, bite-sized chicken to the sautéed mixture, stirring as you go.
6. Gently mix in cooked spaghetti, cheese, salt, and pepper. Heat until cheese is fully melted.
Serve with grated Parmesan cheese, a salad, and garlic bread. Enjoy!
