Crispy Potato & Cheese Bombs with Garlic Butter
Ingredients:
For the Potato Filling:
2 cups mashed potatoes (leftovers work great)
1/2 cup shredded cheese (cheddar, mozzarella, or your choice)
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt & pepper, to taste
1–2 tablespoons chopped chives or green onions (optional)
For the Cheese Center:
1 cup cubed cheese (½-inch cubes of mozzarella, cheddar, or pepper jack)
For Breading & Frying:
1 cup all-purpose flour
2 large eggs, beaten
1 ½ cups seasoned breadcrumbs or panko
Oil for frying (vegetable or canola)
For Garlic Butter:
3 tablespoons unsalted butter
2 cloves garlic, minced
1 tablespoon chopped parsley (optional)
Pinch of salt
Instructions:
1. Make the Filling:
In a bowl, mix mashed potatoes with shredded cheese, garlic powder, onion powder, chives, salt, and pepper until smooth and scoopable.
2. Form the Bombs:
Take a tablespoon of the potato mixture and flatten it slightly in your hand.
Place a cube of cheese in the center and wrap the potato around it, forming a smooth ball.
Repeat until all the mixture is used.
3. Bread the Balls:
Roll each ball in flour, then dip in beaten egg, then coat with breadcrumbs or panko. For extra crunch, double dip in egg and crumbs again.
Place them on a tray and refrigerate for 15–20 minutes to firm up.
4. Fry the Bombs:
Heat 2–3 inches of oil in a deep pan to 350°F (175°C).
Fry the bombs in batches for 2–3 minutes, or until golden brown and crispy.
Drain on a paper towel-lined plate.
5. Make Garlic Butter:
In a small saucepan, melt butter over medium heat.
Add minced garlic and cook for 1 minute until fragrant.
Stir in parsley and a pinch of salt.
6. Finish & Serve:
Brush or drizzle the hot garlic butter over the fried potato bombs.
Serve immediately while the cheese is gooey inside.
Serving Tips:
Serve with marinara, ranch, or spicy mayo for dipping.
Add bacon bits or jalapeños to the filling for extra flavor.
