Ground beef 1 ½ lbs
Chopped onion ½ cup
Chopped bell pepper ½ cup
Worcestershire sauce 2 tsp
Chopped fresh parsley 2 Tbsp
Dijon mustard 1 tsp
BBQ sauce ¼ cup
Bread crumbs ⅔ cup
Italian seasoning 1 tsp
Garlic powder 1 tsp
Large egg 1
Salt and pepper To taste
For the Glaze:
BBQ sauce ¼ cup
Ketchup ¼ cup
Honey 1 Tbsp
How To Make Mini Meatloaf Muffins:
Step 1: Prep & Mix: Preheat the oven to 350°F (175°C). In a large mixing bowl, add the ground beef, chopped onion, chopped bell pepper, Worcestershire sauce, parsley, Dijon mustard, ¼ cup BBQ sauce, bread crumbs, Italian seasoning, garlic powder, egg, salt, and pepper. Knead with your hands until all ingredients are well combined.
Step 2: Form & Fill: Divide the mixture evenly and place it into 10 sections of a well-greased muffin tin.
Step 3: Make the Glaze & Top: In a small bowl, stir together the glaze ingredients: ¼ cup BBQ sauce, ketchup, and honey. Top each mini meatloaf with a generous amount of the glaze.
Step 4: Bake: Bake for 25 minutes, or until the meatloaf muffins are browned and cooked completely through.
