Every once in a while, I crave something cheesy, comforting, yet not too heavy, and that’s where these baked broccoli cheese balls with bacon bits come into play. Originally inspired by classic broccoli cheddar soup, I thought, why not make something bite-sized and perfect for sharing? These balls are ideal for gatherings, potlucks, or as a tasty snack during a busy workweek. Not only are they delicious, but they also sneak in some veggies!
These broccoli cheese balls are fabulous on their own, but if you’re looking to round out your meal, pair them with a crisp side salad or some fresh fruit. For dipping, try a tangy ranch dressing or a spicy marinara sauce for a bit of zest!

Ingredients
2 cups broccoli florets, finely chopped
1 cup sharp cheddar cheese, shredded
1/2 cup bread crumbs
1/4 cup cooked bacon bits
1/4 cup onion, finely diced
2 cloves garlic, minced
1 large egg
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika

Directions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. Steam the chopped broccoli until just tender, about 3-4 minutes, then let it cool.
3. In a large mixing bowl, combine the cooled broccoli, shredded cheddar, bread crumbs, bacon bits, onion, and garlic.
4. Add the egg, flour, salt, pepper, and paprika to the mixture and stir until well combined.
5. Form the mixture into small, compact balls and place them on the prepared baking sheet.
6. Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
7. Let them cool for a few minutes before serving.

Variations & Tips
If you’re looking to switch things up, try adding different types of cheese, such as pepper jack for a spicy kick or mozzarella for extra gooeyness. You can also add a touch of mustard powder or swap bacon bits with chopped ham for a different flavor profile. For a vegetarian version, skip the bacon and boost the flavors with a pinch of smoked paprika.
