Puffed Hand-Opened Minced Dumpling Recipe

Ingredients
For the Dough:
1 egg
1 tea glass of oil
1 tea glass of milk

1 tea glass of water
1 packet of baking powder
2 teaspoons of salt
1 tablespoon of vinegar
4.5-5 cups of flour
For the Filling:
3-4 onions, finely chopped
2-3 tablespoons of oil
400 grams of ground beef
Fresh parsley, chopped
Salt
Black pepper
Thyme
Red pepper flakes (Pul biber)
To Lubricate the Dough:
150-200 grams of butter, melted
For the Topping:
1 tablespoon of milk
1 egg yolk
Instructions

1. Prepare the Filling:
In a pan, heat the oil and sauté the chopped onions until translucent.
Add the ground beef and cook until it releases its juices.

Stir in the spices (salt, black pepper, thyme, and red pepper flakes) and chopped parsley. Mix well and set aside to cool.
2. Make the Dough:
In a large mixing bowl, combine the flour, salt, and baking powder.
Add the egg, oil, milk, water, and vinegar. Mix until the dough is soft and pliable.
Knead the dough thoroughly, ensuring all ingredients are well incorporated.
3. Prepare the Dough Layers:
Divide the dough into four equal portions.
Roll each portion out into a long, thin sheet using a rolling pin.
Stack two sheets on top of each other, brushing the surface between them with melted butter.
Repeat for the remaining two portions.
Place the stacked dough sheets in the freezer for 30 minutes.
4. Shape the Dumplings:
After 30 minutes, remove the dough from the freezer.
Roll out each stacked dough sheet again to your desired thickness.
Cut the dough into equal squares or rectangles.
Place a spoonful of the filling onto each piece of dough.
Fold the dough over the filling, pinching the edges to seal and shape them into bundles or dumplings.
5. Bake the Dumplings:
Preheat your oven to 180°C (350°F).
Line a baking sheet with parchment paper.
Place the shaped dumplings on the prepared baking sheet.
In a small bowl, whisk together the egg yolk and milk, then brush this mixture over the top of each dumpling.
Bake in the preheated oven for 20-25 minutes, or until the dumplings are golden brown and puffed up.
6. Serve:
Allow the dumplings to cool slightly before serving.
