Hands down, the best summertime salad!

4 cups broccoli florets
6 slices bacon, cooked and crumbled
1/2 cup shredded cheddar cheese
1/4 cup red onion, diced
1/2 cup sunflower seeds
1 cup mayonnaise
1/4 cup sour cream
1 tbsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp erythritol (or your preferred low-carb sweetener)
Salt and pepper to taste
Directions
1. In a large bowl, combine the broccoli florets, crumbled bacon, shredded cheddar cheese, diced red onion, and sunflower seeds.
2. In a separate bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, Dijon mustard, and erythritol until smooth.
3. Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
4. Season with salt and pepper to taste.
5. Cover and refrigerate for at least an hour before serving to allow the flavors to meld together.
Variations & Tips

For an extra crunch, add a handful of chopped almonds or walnuts. If you’re not a fan of sunflower seeds, pumpkin seeds are a great alternative. To mix things up, try using a blend of different cheeses, such as Colby Jack or Monterey Jack. If you prefer a little bit of sweetness, tossing in a few dried cranberries can be a delightful addition, just keep in mind this will add some carbs.
