An Amish mate of mine swung by with these chaps at our potluck and they were a smash hit!

Amish Onion Fritters with Chive Dip is a delightful recipe that offers a comforting, crunchy treat perfect for gatherings or a family-style meal. Originating from the heartwarming kitchens of Amish communities, known for their simple, home-cooked meals, these fritters embody the essence of communal dining and wholesome ingredients. Incorporating these into your cooking lineup can add a rustic touch to your table, bringing everyone together for a shared experience of flavors.
These crispy fritters are wonderful on their own, but they truly come into their own when combined with complementary sides. Serving them alongside a fresh green salad or a bowl of creamy tomato soup can balance their rich, oniony taste. For a heartier meal, pair them with grilled sausages or a tender roasted chicken. Don’t forget to place the chive dip at the center for everyone to enjoy!

Ingredients
2 large onions, thinly sliced
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon black pepper
1 egg, beaten
1/2 cup milk
Oil for frying
For the chive dip:
1 cup sour cream
1/4 cup finely chopped chives
1 tablespoon lemon juice
Salt and pepper, to taste

Directions
1. In a large bowl, mix together the flour, baking powder, salt, and pepper.
2. Stir in the beaten egg and milk until the mixture forms a smooth batter.
3. Add the sliced onions to the batter and stir until they are well-coated.
4. Heat oil in a deep skillet over medium heat.
5. Once hot, scoop spoonfuls of the onion batter into the oil and fry for about 2 to 3 minutes on each side, or until golden brown and crispy.
6. Remove the fritters from the oil and drain on paper towels.
7. For the chive dip, combine sour cream, chives, and lemon juice in a small bowl. Season with salt and pepper to taste.

8. Serve the warm fritters with the chive dip on the side.
Variations & Tips
For those looking to add a little twist to the classic recipe, consider adding a teaspoon of smoked paprika or garlic powder to the batter for an extra depth of flavor. If you’re catering to vegetarians, you can skip the typical pairings of meats and focus more on vegetable sides or a hearty bean salad. For a dairy-free dip alternative, you can use a base of blended cashews with water, adding garlic, chives, and lemon juice to taste.
