Graham crackers (crushed) 2 sleeves (about 2 1/2 cups)
Lightly salted cashews (roughly chopped) 1 1/4 cups
White chocolate chips 12 oz
Cinnamon 1/2 teaspoon (optional)
How To Make Clodhopper Candy:
Step 1: Preparation: Line a baking sheet with parchment paper and set it aside. This will prevent the candy from sticking to the pan and make for easy cleanup.
Step 2: Melt Chocolate: In a large bowl, microwave the 12 oz white chocolate chips in 30-second increments, stirring each time until they are fully melted and smooth. Be careful not to overheat the chocolate, as it can become grainy.
Step 3: Combine Ingredients: Add the crushed graham crackers and the 1 1/4 cups roughly chopped cashews to the melted white chocolate. Mix everything together until well combined. If you’d like to add the 1/2 teaspoon cinnamon (optional), now is the time to stir it in.
Step 4: Spread and Cool: Once all the ingredients are thoroughly mixed, spread the mixture onto the prepared parchment paper in a thin layer. You can use a spatula to even it out. Allow the candy to cool completely. This usually takes a couple of hours at room temperature, or you can speed up the process by placing it in the refrigerator.
