Ingredients:
Ingredient Quantity
Beef Chuck Roast 2 pounds, trimmed and cut into chunks
Onions 4 large, thinly sliced
Garlic Cloves 4, minced
Beef Broth 1 cup
Worcestershire Sauce 2 tablespoons
Balsamic Vinegar 1 tablespoon
Dried Thyme 2 teaspoons
Salt and Pepper To taste
Olive Oil 2 tablespoons
Instructions:
Caramelize the Onions (20-25 minutes):

Heat olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, until golden brown and caramelized. This takes about 20-25 minutes.
Add the minced garlic during the last few minutes of cooking and sauté until fragrant.
Season the Beef (2 minutes):

Season the beef chunks generously with salt, pepper, and dried thyme.

Layer in the Slow Cooker (5 minutes):

Transfer the caramelized onions and garlic to the bottom of your slow cooker, creating a flavorful bed.
Arrange the seasoned beef chunks on top of the onions in a single layer.
Create the Flavor Base (2 minutes):

In a small bowl, whisk together the beef broth, Worcestershire sauce, and balsamic vinegar.
Pour this mixture over the beef and onions in the slow cooker, ensuring everything is evenly coated.
Slow Cook and Enjoy (6-8 hours):

Cover the slow cooker and cook on low heat for 6-8 hours, or until the beef is tender and falls apart easily with a fork.
Serve the tender beef over mashed potatoes, rice, or your desired side dish. Garnish with fresh herbs for added flavor and color.
