I’m pretending to be calm, but I can’t get enough of this pie.

Quiche is one of those delightful dishes that can transform any meal into something special. Originating from France, this savory pie has become a brunch staple across the globe. My three cheese quiche is a go-to when I want something flaky, creamy, and golden. It’s perfect for a weekend brunch or a simple dinner when life gets hectic. Plus, it’s a fantastic way to impress guests without spending hours in the kitchen.
This three cheese quiche pairs beautifully with a light, crisp salad—think arugula with a lemon vinaigrette. You could also serve it with roasted asparagus or a simple fruit salad for a refreshing contrast. For a heartier meal, consider adding a side of roasted potatoes or a warm soup.

Three Cheese Quiche
Servings: 6

Ingredients
1 pre-made pie crust (or homemade, if you have the time!)
4 large eggs
1 cup heavy cream
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup crumbled feta cheese
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg
1 tablespoon chopped fresh chives (optional)
Directions
Preheat your oven to 375°F (190°C).
Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess dough and crimp the edges.
In a large bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
Sprinkle the cheddar, mozzarella, and feta cheeses evenly over the bottom of the pie crust.
Pour the egg mixture over the cheeses, ensuring everything is evenly distributed.
Sprinkle the chopped chives on top, if using.
Bake in the preheated oven for 35-40 minutes, or until the quiche is set and the top is golden brown.
Allow the quiche to cool for at least 10 minutes before slicing and serving.
Variations & Tips

For a different flavor profile, try adding sautéed mushrooms, spinach, or cooked bacon to the filling. You can also experiment with different cheeses like Gruyère or goat cheese. If you’re short on time, use a store-bought pie crust, but if you have a bit more time, making your own can add an extra layer of flakiness and flavor. To make it a bit healthier, substitute half-and-half for the heavy cream.
