2 cups all-purpose flour

2 large eggs
3/4 cup whole milk
1 teaspoon vanilla extract
4 fresh peaches, peeled, pitted, and diced
Vegetable oil for frying
Powdered sugar for dusting
Directions
1. In a large bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.
2. In another bowl, beat the eggs, then add the milk and vanilla extract, mixing until well combined.
3. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Be careful not to overmix.
4. Gently fold in the diced peaches until evenly distributed.
5. In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).
6. Carefully drop spoonfuls of the batter into the hot oil, frying a few at a time. Avoid overcrowding the pan.
7. Fry the fritters for 2-3 minutes on each side, or until they are golden brown and cooked through.
8. Using a slotted spoon, transfer the fritters to a paper towel-lined plate to drain excess oil.
9. Once all the fritters are fried and slightly cooled, dust them with powdered sugar before serving.

For a twist, try adding a handful of blueberries or raspberries to the batter for a mixed fruit fritter. You can also experiment with different spices such as nutmeg or cardamom to enhance the flavor. If you prefer a lighter fritter, substitute half of the all-purpose flour with whole wheat flour.
