Ingredients: Understanding the Components
To create the perfect cornbread dressing, it’s crucial to understand the role of each ingredient. Here’s a breakdown of what you’ll need and how each component contributes to the final dish:

1. Poultry Seasoning
Amount: 2 teaspoons
Role: Poultry seasoning is a blend of herbs that typically includes sage, thyme, marjoram, and rosemary. It imparts a savory depth to the dressing, complementing the other flavors beautifully.
Tip: If you don’t have poultry seasoning on hand, you can mix your own by combining equal parts of dried sage and thyme, with a pinch of marjoram and rosemary.
2. Turkey Broth
Amount: Enough to moisten the dressing
Role: Turkey broth adds moisture and a rich, savory flavor to the dressing. It helps bind the ingredients together and infuses the mixture with a delicious depth.
Tip: If turkey broth isn’t available, you can substitute with chicken broth or vegetable broth. Homemade broth will yield the best flavor.

3. Eggs
Amount: 4 large eggs, beaten
Role: Eggs act as a binder, holding the dressing together and adding richness. They help to firm up the dressing as it bakes.
Tip: For a richer dressing, use large eggs from pasture-raised chickens. If you’re concerned about dietary restrictions, consider using egg substitutes or flax eggs.
4. Butter
Amount: 1/2 cup
Role: Butter adds a creamy richness to the dressing. It’s used both in cooking the vegetables and mixed into the dressing for added flavor.
Tip: If you prefer, you can substitute butter with ghee or a plant-based butter for a different flavor profile or dietary needs.

5. Toasted Bread
Amount: 4 cups finely crumbled
Role: Toasted bread forms the base of the dressing, providing structure and texture. It absorbs the broth and flavors while maintaining a slight crispness.
Tip: Use day-old bread for the best results. You can toast the bread in the oven or toaster before crumbling it.
6. Cornbread
Amount: 4 cups finely crumbled
Role: Cornbread adds a slightly sweet and crumbly texture to the dressing. It pairs well with the toasted bread and contributes a unique flavor.
Tip: For optimal results, use homemade cornbread or a high-quality store-bought version. Ensure it’s properly crumbled for even mixing.
7. Onions
Amount: 2 cups chopped
Role: Onions provide a savory, aromatic base for the dressing. When sautéed, they become tender and add depth of flavor.
Tip: Sweet onions or shallots can be used for a milder taste. You can also add a bit of garlic for extra flavor.
8. Celery
Amount: 2 cups chopped
Role: Celery adds a crisp texture and fresh flavor to the dressing. It complements the onions and provides a nice crunch.
Tip: For added aroma, include celery leaves or use the inner stalks of celery.
9. Salt
Amount: 1 tablespoon
Role: Salt enhances the overall flavor of the dressing and helps balance the seasoning.
Tip: Adjust the amount of salt based on your taste preferences and the saltiness of your broth.

Instructions: Detailed Preparation
Follow these detailed steps to create a delicious Old Fashioned Cornbread Dressing:

1. Sauté the Vegetables
Melt Butter:
In a large skillet, melt 1/2 cup of butter over medium heat.
Butter adds a rich, creamy flavor and helps in cooking the vegetables.
Cook the Vegetables:
Add 2 cups of chopped onions and 2 cups of chopped celery to the skillet.
Sauté the vegetables until they are tender and translucent, about 5-7 minutes.
Stir occasionally to ensure even cooking and prevent the vegetables from browning.

2. Prepare the Bread and Cornbread
Crumble the Bread:
In a large bowl, combine 4 cups of finely crumbled toasted bread and 4 cups of finely crumbled cornbread.
Mix them together until evenly distributed.

Tip: For a varied texture, you can use a combination of white and whole-grain bread. Ensure that the bread is properly toasted for the best results.
3. Mix in the Vegetables and Seasonings
Combine Ingredients:
Add the sautéed onions and celery (including their cooking liquid) to the bowl with the bread and cornbread.
Stir in 1 tablespoon of salt, 2 teaspoons of poultry seasoning, and any other desired seasonings.
Mix Thoroughly:
Ensure that all ingredients are well combined and the seasoning is evenly

Tip: For a crispier top, you can broil the dressing for a few minutes at the end of the baking time. Keep a close eye to prevent burning.

SOUTHERN CORNBREAD DRESSING
Recipe by Grace
Nothing complements a juicy turkey and creamy gravy quite like moist, soulful Southern Cornbread Dressing. When I was younger, I could eat this by the spoonful, and to this day, my grandmother’s flavorful recipe remains my favorite. I love how this cornbread dressing has the perfect texture—firm enough to hold its shape when cut, yet incredibly moist and packed with flavor.

Ingredients
2 teaspoons freshly ground black pepper

1 tablespoon dried sage

2 teaspoons poultry seasoning

turkey broth

4 large eggs, beaten

1/2 cup butter

4 cups finely crumbled toasted bread

4 cups finely crumbled cornbread

2 cups chopped onions

2 cups chopped celery

1 tablespoon salt

Directions
Start by melting 1/2 of butter in a skillet; then add onions and celery and saute until tender.
In a large bowl, combine toasted bread and cornbread and mix.
Add onions and celery plus their cooking liquid, the salt, pepper, sage, and poultry
seasoning and mix thoroughly.
Using a bulb baster, add just enough turkey giblet broth to make a very moist mixture, then stir in the eggs and scrape the dressing into a large greased baking pan or dish.
Bake in 400 degree F oven until dressing is nicely browned, about 30-40 minutes.
