Peanut Butter Chocolate Delight

 

1/2 cup unsalted butter, softened (1 stick)

1/2 cup creamy peanut butter

1/2 cup granulated sugar

1/2 cup light brown sugar

1 large egg

1 1/2 cups all-purpose flour

3/4 teaspoon baking powder

1/4 teaspoon baking soda

1 cup milk chocolate chips

1/2 teaspoon canola or vegetable oil

1/2 cup powdered sugar

Directions:

Preheat and Prepare: Set the oven to 375°F. Line a cookie sheet with parchment paper or lightly coat it with cooking spray.

Creamy Blend: Using a stand mixer or handheld blender, whip together the softened butter, peanut butter, granulated sugar, and brown sugar until creamy and light in color. Add the egg and blend again.

Whisk and Combine: In a separate bowl, whisk together the flour, baking soda, and baking powder. Gradually add this mixture to the wet ingredients, blending just enough to combine.

Shape and Bake: Roll the dough into 1-inch balls and arrange them on the prepared cookie sheet. As they don’t spread much, you can fit about 15 per sheet. Bake for 8 minutes.

Press for Perfection: Once out of the oven, gently press each cookie with a small cup to flatten them and create beautiful crinkly edges.

Cool and Transfer: Allow the cookies to cool on the sheet for 10 minutes, then transfer them to a cooling rack.

Chocolate Topping: In a microwave-safe bowl, melt chocolate chips and oil in 30-second bursts for 2 minutes, stirring in between. Spoon a bit of melted chocolate onto each cookie and spread it out.

Final Touch: Allow the chocolate to set completely, approximately 2 hours, before dusting the cookies with powdered sugar. For quicker setting, you can place the cookies in the fridge or freezer.
