Ingredients (Serves 4)
1 lb ground breakfast sausage (mild or spicy)
1 cup shredded cheddar or mozzarella cheese
2 cups pancake mix (+ ingredients listed on box, usually water & egg)
1 tbsp maple syrup (optional, for batter)
1/2 tsp garlic powder (optional, savory boost)
Butter or oil (for cooking)

Instructions
Cook the Sausage
Brown sausage in a skillet over medium heat, breaking it into small crumbles. Drain excess grease.
Stir in cheese while warm and set aside.
Make the Pancake Batter
Prepare pancake mix as directed (usually mix + water + egg).
For extra flavor, add 1 tbsp maple syrup (sweet) or garlic powder (savory).
Assemble & Cook
Heat a griddle or pan over medium-low. Lightly grease with butter/oil.
Pour ¼ cup pancake batter onto the griddle. Immediately press 1 tbsp sausage-cheese mix into the center.
Cover with another ¼ cup batter to encase the sausage.
Cook until bubbles form (2-3 mins), flip, and cook until golden.
Serve
Stack pancakes and drizzle with maple syrup or top with a fried egg.
