NO BAKE OATMEAL SCOTCHIES
Ingredients:
1 cup of butterscotch chips
3 cups of dry quick-cooking oats
1 teaspoon of vanilla extract
2 cups of granulated sugar
1/2 cup of milk
1/2 cup of unsalted butter
dash of salt
Instructions:
1. In a large bowl, mix 1 cup of butterscotch chips with a pinch of salt and 3 cups of quick-cooking oats.
2. In a saucepan, melt 1/2 cup of unsalted butter. Add 2 cups of granulated sugar and 1/2 cup of milk. Boil for 1 minute, stirring constantly.
3. Remove from heat and stir in 1 teaspoon of vanilla essence.
4. Pour the hot mixture over the dry ingredients and mix until oats are coated.
5. Drop spoonfuls onto parchment paper or press into a greased baking dish.
6. Let cool and set at room temperature for 30 minutes.
