Creamy Chicken and Carrot Spread
Ingredients (Makes about 8–10 servings)
Main Base:
Chicken breast – 2 medium pieces (about 12–14 oz total), cooked and finely shredded.
Carrot – 1 large, peeled and finely grated.
Creamy Mixture:
Cream cheese – 7 oz (200 g), softened to room temperature for easier mixing.
Mayonnaise – 4 tablespoons, for smoothness and richness.
Greek yogurt or sour cream – 2 tablespoons (optional, for tanginess and lighter texture).
Seasonings and Flavor Boosters:
Fresh parsley – 2 tablespoons, finely chopped.
Garlic powder – ½ teaspoon.
Onion powder – ½ teaspoon.
Salt – ½ teaspoon (or to taste).
Black pepper – ¼ teaspoon, freshly ground.
Paprika – ¼ teaspoon, optional for a mild smoky note.
Lemon juice – 1 teaspoon, for freshness.
Instructions
Step 1: Cook the Chicken
Place the chicken breasts in a medium saucepan and cover them with water. Add a pinch of salt and, if desired, a bay leaf for extra aroma.
Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 12–15 minutes, or until the chicken is fully cooked through (internal temperature should reach 165°F / 74°C).
Remove the chicken from the water and let it cool slightly. Using two forks, shred the chicken into very small pieces so it blends well into the creamy base.
Step 2: Prepare the Carrot
Peel and finely grate the carrot using the fine side of a box grater.
If the carrot is very watery, gently squeeze out excess moisture with a paper towel so the spread doesn’t become runny.
Step 3: Make the Creamy Base
In a large mixing bowl, add the softened cream cheese. Beat it with a spoon or hand mixer until smooth and creamy.
Add the mayonnaise and Greek yogurt (or sour cream, if using) and mix until fully combined and fluffy.
Step 4: Combine Everything
Add the shredded chicken, grated carrot, parsley, garlic powder, onion powder, salt, pepper, paprika, and lemon juice into the bowl with the creamy base.
Mix thoroughly until all ingredients are evenly distributed and the mixture has a consistent, spreadable texture.
Taste and adjust seasoning as needed — add more salt for savoriness, lemon juice for brightness, or paprika for extra color and flavor.
Step 5: Chill and Serve
Transfer the spread to an airtight container and refrigerate for at least 1 hour before serving. This chilling time allows the flavors to meld together beautifully.
