Ingredients:
For the Meatloaf:

Dried Thyme 1 teaspoon
Ketchup 1/2 cup
Brown Sugar 2 tablespoons
For the Mashed Potatoes:

Potatoes (peeled and chopped) 2 pounds
Milk 1/2 cup
Unsalted Butter 1/4 cup
Salt and Pepper To taste
For the Topping:

Shredded Cheddar Cheese 1 1/2 cups
Fresh Parsley (chopped) For garnish
Instructions:
Preheat oven: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
Soak breadcrumbs: In a small bowl, combine breadcrumbs and milk. Let soak for 5 minutes.

Make meatloaf mixture: In a large mixing bowl, combine ground beef, soaked breadcrumbs, onion, garlic, eggs, Worcestershire sauce, salt, pepper, and dried thyme. Mix well.
Shape meatloaf: Transfer meat mixture to prepared baking dish and shape into a loaf.
Make topping: In a small bowl, mix together ketchup, brown sugar, and Dijon mustard. Spread over meatloaf.
Bake: Bake for 50-60 minutes, or until internal temperature reaches 160°F (71°C).
Make mashed potatoes: While meatloaf is baking, place chopped potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil. Cook for 15-20 minutes, or until tender. Drain and return to pot. Add milk and butter. Mash until smooth and creamy. Season with salt and pepper.
Assemble and bake: Once meatloaf is done baking, spread mashed potatoes over the top. Sprinkle with shredded cheddar cheese. Broil for 3-5 minutes, or until cheese is melted and bubbly.
Serve: Let meatloaf rest for 10 minutes before slicing and serving. Garnish with chopped parsley.
