Savvy Chicken Pleasure !!


4 skinless, boneless chicken breasts

2 tablespoons of olive oil

1 onion, finely chopped

2 cloves garlic, minced

1 cup sliced mushrooms

1 cup chicken broth

½ cup heavy cream

1 tbsp Dijon mustard

Salt and pepper to taste.

Chopped fresh parsley for garnish.



Chicken Cooking: Season chicken breast with salt and pepper. In a large skillet heat olive oil over medium high heat. Add chicken breast, cooking till browned and cooked through (about 5-6 minutes per side). Remove from skillet; keep aside.

Sauce Preparation: Add a little more olive oil if necessary in the same pan. Sauté onions until softened (about 3-4 minutes). Add minced garlic and the sliced mushroom then stir fry them until browned and tender (about 5 minutes.)

Mix Ingredients: Add chicken broth and bring to a simmer while scraping any brown bits from the bottom of the pan. Stir in heavy cream, Dijon mustard and thyme. Let it simmer for about 5minutes until sauce is slightly thickened.

Complete the Dish: Put back the chicken breasts into the skillet so that they are immersed in sauce. Simmer gently for another 2-3 minutes until chicken is heated through and flavors blend. If necessary, taste and adjust seasonings with salt and pepper.

Serve: Before serving, garnish with chopped fresh parsley. To enjoy “Savvy Chicken Pleasure”, serve hot with rice, pasta or crusty bread that helps mop up its delectable sauce.
