1 lemon, juiced and zested
1 teaspoon dried rosemary

2. In a small bowl, mix together the olive oil, minced garlic, chicken broth, mustard, lemon juice and zest, and dried rosemary.
3. Pour the mixture over the chicken in the slow cooker.
4. Season the chicken with salt and pepper to taste.
5. Cover the slow cooker and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and tender.
6. Once cooked, you can optionally broil the chicken breasts in the oven for 2-3 minutes to get a slightly golden top.

Variations & Tips
This recipe is incredibly versatile and allows for plenty of variations to suit your taste or dietary needs. For a creamy twist, stir in a splash of heavy cream or coconut milk into the sauce during the last 30 minutes of cooking. If you like it spicy, add a pinch of red pepper flakes to the garlic mustard mixture. Veggie lovers can add some carrots or potatoes around the chicken in the slow cooker to turn this into a one-pot meal. Each tweak brings its own unique flair to this delightful dish!
