I always feel so fancy serving these! My hubby can eat 3 rolls himself!

There’s nothing quite like biting into a delicious, buttery lobster roll on a sunny afternoon. Though this dish hails from the New England coast, it’s found its way into the hearts and kitchens of those of us here in the Midwest. Lobster rolls remind me of summer picnics and family gatherings by the lake, drawing a connection between the past and present. This recipe brings the essence of the coast to the countryside and is perfect for those looking to try something a little special for their loved ones.
Lobster rolls pair wonderfully with a side of crispy homemade potato chips or a fresh corn salad. For a truly nostalgic touch, a tangy coleslaw or a simple dill pickle spear adds that perfect crunch. And don’t forget a glass of refreshing iced tea or homemade lemonade to wash it all down.

Ingredients
1 pound cooked lobster meat, chopped
1/4 cup mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon finely chopped chives
Salt and pepper, to taste
4 tablespoons unsalted butter, softened
4 New England-style split-top hot dog buns
Leafy green lettuce, optional

Directions
1. In a medium bowl, combine the chopped lobster meat, mayonnaise, lemon juice, and chives. Mix gently until well combined. Season with salt and pepper to taste.
2. Spread the softened butter on the outside of each hot dog bun.
3. Heat a large skillet over medium heat. Place the buns in the skillet, buttered side down, and toast until golden brown and crisp, about 2-3 minutes.
4. Remove the buns from the skillet and let them cool slightly. If using, place a leaf of lettuce inside each bun.
5. Spoon the lobster mixture into the toasted buns. Serve immediately and enjoy!
Variations & Tips

For a little twist, you can add a dash of Old Bay seasoning to the lobster mixture, giving it a hint of spice. If you’re in the mood for extra zest, a bit of finely chopped celery adds a delightful crunch. For a lighter version, you can substitute Greek yogurt for the mayonnaise. And if you can’t find New England-style buns, any split-top hot dog bun will do just fine. Keep it simple and enjoy the nostalgic flavors.
