Love the smell of these cookies while they are baking! Tastes even better

Today, I’m excited to share a delightful twist on a traditional cookie, perfect for our Midwest autumn gatherings or any cozy family afternoon. These Sweet Ricotta Peach Cookies combine the creaminess of ricotta cheese with the sweetness of peaches, creating a delightful treat that’s a bit different from your everyday cookie. This recipe brings a little hint of Italian dessert tradition right to our kitchen, infused with the seasonal charm of peaches.
These cookies are splendid on their own, but for an extra special treat, you can serve them alongside a scoop of vanilla ice cream or a dollop of whipped cream. They’re also perfect for pairing with a warm cup of tea or a cold glass of milk. If you’re looking to dress them up for a gathering, a platter of these cookies alongside some other desserts like brownies or a fruit salad makes for a lovely dessert spread.

Ingredients
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 cup ricotta cheese
1/4 cup peach preserves

Directions
1. Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with parchment paper.
2. In a small bowl, whisk together the flour, baking powder, and salt.
3. In a larger bowl, cream together the softened butter and sugar until light and fluffy.
4. Beat in the egg and vanilla extract until well combined.
5. Mix in the ricotta cheese, then gradually add the dry ingredients to the wet ingredients, mixing until just combined.
6. Drop by teaspoonfuls onto the prepared baking sheet, spacing them about 2 inches apart.
7. Make a small indentation in the center of each cookie with your thumb or the back of a spoon, then fill each indentation with about 1/2 teaspoon of peach preserves.
8. Bake for 15-18 minutes or until the edges are lightly golden.
9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Variations & Tips
For a different fruit flavor, you can substitute the peach preserves with any other fruit preserves you have on hand. Apricot and raspberry make delicious alternatives. For those who love a bit of extra texture, adding a small sprinkle of chopped nuts or even mini chocolate chips before baking can add a delightful twist to the cookies.
